ASIAN NOODLE BOWL

Serves 2 small portions
INGREDIENTS1/2 package of Bean Thread Noodles. (They usually come in 4 individual bunches within a package.)
Baby Bok Chop chopped
Carrots slivered or shaved
Spring Onions, Chopped
2 tablespoons soy sauce
2 teaspoons sugar
1 tsp sesame or olive oil
1/2 orange juiced
1 tsp fish sauce
1 tablespoon sesame seeds (for garnish)
Soak noodles in hot water for about 10 minutes or until soft. Drain them and snip them in various places as the noodles are extremely long.
Mix the ginger, orange juice, soy, sugar and fish sauce and put aside for a minute.
Meanwhile in a wok saute all the ingredients until tender but still firm. It should only take a few minutes to cook. Combine the noodles and the sauce to the wok and continue to cook for a few minutes until the sauce coats the dish throughly.
Garnish with sesame seeds and eat with chop sticks. It is much more fun that way!
