Chinese Cabbage Salad with Orange & Tahini Dressing

One of my favorite recipe books, this recipe offers a great way to add antioxidant-rich cabbage to your diet.
Serves 4-6
Ingredients
1 small cabbage
4-5 oranges
½ tbs. lemon juice
1 tbs. soy sauce
1 tbs. apple cider vinegar
pinch of salt
1 ½ tbs. water
pepper
clove of garlic, pressed
1 ½ tbs. dark sesame oil
¼ cup tahini
optional: slivered almonds
Preparation
Slice the cabbage into quarters and then into thin strips crosswise or at an angle crosswise. Cut the oranges in chunks or rounds. Mix together the next seven ingredients and set aside. Blend together the tahini and oil, then whisk into the salad dressing mixture. The dressing should be thick. Toss the dressing together with the cabbage and oranges and garnish with additional orange slices. (I also like to add slivered almonds!)
