Honey Banana BreadRecipe courtesy of New Life Hiking Spa
2 cups whole wheat pastry flour
1/2 cup sucanat or brown sugar
1 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. nutmeg and salt (optional)
1 tsp. vanilla
3 mashed ripe bananas
3 tbs. yogurt, plain or vanilla
Mix first 6 ingredients (the "dry" ones). Add the last 4 ingredients (the "wet" ones). Coat an 9x5" loaf pan with non-stick cooking spray. Spread batter into pan and bake at 350 F for 45-50 minutes, or just until toothpick inserted into center comes out clean. Remove from oven, let sit for 10 minutes. Invert onto a rack or serving board, cool and slice.
** Walnuts, raisins, craisins, all make wonderful additions to this recipe. Add about 1/3 cup of your choice.
