Gluten 101
Wendy Bazilian, DrPH, MA, RD

Going gluten-free or at least thinking about it? It can be tricky unless you know where to start.

Gluten-free foods do not necessarily mean they are ‘good for you’ but simply that they do not contain wheat, rye, barley, any gluten-containing cousins of wheat, and are processed in a gluten-free facility.

When looking for gluten-free foods, remember to exercise your good nutrition know-how in choosing foods that support your food sensitivities, intolerances, and preferences and your nutrition goals. Not everyone is cut out for a gluten free diet while others find that it alleviates issues for which they never knew the cause.

We are going to try to help you make some educated choices when it comes to glutens and how to work your way through the grocery aisles to make the right choices for yourself. Let's call this process Gluten 101.

Cream of Leek & Zucchini Soup
This soup is so creamy and silky - it tastes like it's full of cream. But it doesn't have a drop of cream, except for a little butter and milk. It's also double-duty: it uses up any late-season zucchini that's been sitting around
