FIRE-GRILLED VEGETABLE RISOTTO WITH QUINOA 

MAKES 3 CUPS; SERVING SIZE: ¾ CUP 

1 c. yellow onion, diced medium

2 tsp. garlic, chopped

1/8 tsp. saffron threads

1. tsp. Miraval Oil Blend (page 19)

. c. arborio rice

. c. Chardonnay

3 . c. Vegetable Stock (page 24), hot

2 Tbsp. Parmesan cheese

. c. Grilled Vegetables (page 140)

2 Tbsp. packed shiitake mushrooms, julienned

. c. packed baby spinach

. c. red bell pepper, diced

. c. edamame beans

. c Basic Quinoa (page 18)

2 tsp. white truffle oil

. tsp. kosher salt

. tsp. freshly ground black pepper

PREHEAT medium pot over medium-high heat.

SAUTE onions and garlic in oil until translucent, about 3 minutes. Stir often, using wooden spoon or a high-temperature
