Cranberry Chutney – yields 2 Cups
Serve as a side dish, or as a sauce for beef or pork. From the kitchen of the Cliff House Resort & Spa
Ingredients
1 cup cranberries
1 Cortland apple, peeled and sliced
4 halves dried apricot
1/4 cup raisins
1/4 cup sugar
1 tbs. honey
1 tbs. water
1 tbs. cider vinegar
1-1/2 tsp. minced fresh ginger
1 tbs. chopped walnuts
Preparation
In a medium-sized, non-reactive saucepan, simmer all ingredients together until syrupy (about 20 minutes). Cool and serve, or refrigerate for future use.
