To get the most phytonutrient bang for your buck, health writer, Jo Robinson suggests eating certain foods quickly after harvest. (She also has a love for dandelion, but you’ll need to read her new book Click here.
Here is her list of the top foods to get from the farm and eat right away, don’t let it sit in the fridge or on the counter for over a day. (And not the market most likely.)
1. Artichokes
2. Arugula
3. Asparagus
4. Broccoli
5. Brussels sprouts
6. Kale
7. Lettuce
8. Parsley
9. Mushrooms
10. Spinach
The good news is that a few of these are easy to grow even for the novice or space-confined gardener. Kale for instance can be planted in the spring or fall and requires very little maintenance. Lettuce comes in a dozen varieties. We are big fans of the varieties of greens and produce seeds available from egardenseed (egardenseed.com). Other easy to grows include, lettuce, parsley, spinach, and arugula!
