  • No Bake, Grain Free, Dairy Free, GAPS/SCD
  • Total time from start to finish: 35 minutes (15 minutes prep time, 20 minutes freezer time)
  • Makes about 32 Truffles

Ingredients

  • 1/2 cup coconut oil (where to buy)
  • 1/2 cup raw honey (where to buy)
  • 1/2 cup cocoa powder (where to buy)
  • 1 teaspoon vanilla (where to buy)
  • 2 cups shredded coconut (where to buy)
  • 1 additional cup shredded coconut, to coat the truffles

Directions

  1. Mix the coconut oil, honey, cocoa powder and vanilla in a medium sized mixing bowl.
  2. Stir with a wooden or bamboo spoon until mixed thoroughly.
  3. Add 2 cups of shredded coconut, and mix till the coconut is evenly distributed through the chocolate.
  4. Use a small scoop (this scoop is a great one to use for this recipe), and form into balls.
  5. Roll the balls in the extra 1 cup of shredded coconut.
  6. Place a square of parchment paper on a plate. Put the balls on the parchment paper.
  7. Put the plate of truffles in the freezer for about 20 minutes.
  8. Then serve, or move to a sealed container in your refrigerator until you would like to serve them. If you want to save them, we find hiding them to be a smart idea!
