SPINACH RICOTTA DUMPLINGS

Serves 24 Serving Size: One large dumpling

Ingredients

2 pounds frozen spinach, defrosted and well-drained

1 cup low-fat cottage cheese

1 cup part-skim or low-fat ricotta cheese

3 eggs

3 egg whites

3/4 cup parmesan cheese

1 1/2 cups bread crumbs

1 tsp chicken base

Nutmeg to taste

Salt, pepper and Italian seasonings

Non-stick spray

Preparation

Mix all ingredients together. Form into 24 dumpling balls. Spray cookie sheet with non-stick spray. Place dumplings on cookie sheet. Spray dumplings with non-stick spray. Bake at 350° for 20-30 minutes. Serve with your favorite pasta sauce.

Ingredients

1 box Fiber One cereal

1 box Kashi Honey Puffed cereal

1 box Kashi Medley cereal

1 box Kashi Go Lean cereal

1 box Protein Plus cereal

1 1/2 cups Nestle semi-sweet mini morsels

1 1/2 cups Nestle butterscotch morsels

Preparation

Mix all ingredients together and store in an air-tight container.
