Makes 1 cake, 16 slices
Don’t let the low calorie, fat, and cholesterol count fool you. This decadent cake from pastry chef Gerry Magaleski of the Park Hyatt Beaver Creek Resort & Spa has a wickedly chocolate taste.

Ingredients

1 1/4 cups flour

3/4 cup granulated sugar

1/4 cup cocoa

1/4 cup margarine, softened

1 tsp. baking powder

2 tsp. baking soda

1/4 tsp. salt

3 large egg whites

4 tsp. vanilla

5 cups hot water

2 tsp. confectioner’s sugar (for powdery “icing”)

Preparation

Preheat oven to 350℉. Measure ingredients into a mixing bowl in the order listed. Beat until smooth. Pour into a 9×9-inch pan that has been sprayed with non-stick cooking spray (or use wax paper to line the pan). Bake 25 to 30 minutes or until an inserted wooden toothpick comes out clean. When cake has cooled, sift the confectioner’s sugar over the top and serve. If you want to really splurge, add a dollop of whipped topping.
