Ingredients
1 1/4 cups flour
3/4 cup granulated sugar
1/4 cup cocoa
1/4 cup margarine, softened
1 tsp. baking powder
2 tsp. baking soda
1/4 tsp. salt
3 large egg whites
4 tsp. vanilla
5 cups hot water
2 tsp. confectioner’s sugar (for powdery “icing”)
Preparation
Preheat oven to 350℉. Measure ingredients into a mixing bowl in the order listed. Beat until smooth. Pour into a 9×9-inch pan that has been sprayed with non-stick cooking spray (or use wax paper to line the pan). Bake 25 to 30 minutes or until an inserted wooden toothpick comes out clean. When cake has cooled, sift the confectioner’s sugar over the top and serve. If you want to really splurge, add a dollop of whipped topping.

Red Mountain French Fries
Yields eight 3-oz servings If french fries are your downfall, stop worrying. Executive chef Jim Gallivan of Red Mountain Spa has concocted spicy, baked fries with just a fraction of the fat that are actually good for you.Ingredients
1 tbs. canola oil
2 tbs. Dijon mustard
2 tbs. honey
11/2 tsp. onion powder
11/2 tsp. garlic powder
1 tsp. paprika
2 pounds potatoes, cut into strips
salt and pepper to taste
Preparation
Line a sheet pan with parchment or wax paper.
Mix olive oil, mustard, honey, and spices together. Toss with the potato slices. Season with salt and pepper. Bake at 325℉ until light brown and tender (12 to 16 minutes).
