Atop a hill in rural Ontario, chef Ro Cober has created a B&B sanctuary within a 5,000-square-foot luxury cabin. Called The Spa at Log Cabin Heaven, the property is within a short drive from the artist’s village of Elora. Besides shops, galleries, and cafƒ©s, the area is filled with options for outdoor entertainment including kayaking, canoeing, tubing on the Grand River, swimming, fly fishing, horseback riding, and hiking the Cataract Trailway. Later, enjoy a wine tasting session at one of the area’s estate wineries. Back at Log Cabin Heaven, Cober offers themed cooking classes featuring seasonal foods. We have three raised gardens where we grow most of our own food, she says. We’re located in a Mennonite community where horses are still used to plow fields, and people use buggies for transportation. The farmers grow their crops without using pesticides or chemicals, so whatever we don’t grow on-site, we can source locally with confidence, knowing the foods are pure. Cober has produced a cookbook (available as an e-book) called The Witchin’ Kitchen at Log Cabin Heaven, featuring some of the property’s most popular recipes “and is happy to accommodate any diet requests, including raw, vegan, vegetarian, meat, and diabetic.
