The 2010 Dietary Guidelines dished up a four-word reminder to keep us food safe.
Clean, Separate, Cook, Chill. And I actually remember them as 3 Cs and an S from start to finish. Clean, Cook, Chill and keep things Separate.

Clean. Be sure to wash all counters, cooking surfaces, cutting boards and kitchen tools like knives. Warm, soapy water and a sponge is all you need. And don’t forget to wash (or microwave for 1 minute) your sponge, too. Clean reusable grocery bags and remember to wash your hands frequently, too.

Separate. Keep raw meat, poultry and fish away from other foods. This includes vegetables, fruits, grains and even other cooked proteins. Use a different dish for the raw (before) and cooked (after) protein. And do not drizzle or brush on sauces or marinades that were used on the raw meat earlier to the finished, cooked item. Keep fish, seafood, poultry and meat away from other foods in the grocery cart and in the fridge.

Cook is not about ‘whether’ but to what temperature. At least 165 degrees Fahrenheit is right for most proteins. And use a meat thermometer. Steer clear of rare steer to decrease your risk of E-coli or other food-borne bugs and bacteria.

Chill. Many food-borne pathogens thrive between about 40Ëš and 140Ëš F – in other words, all temperatures between outside of the fridge and inside the oven. Be sure to get any leftovers or extra servings into the fridge and cooled within 4 hours.

Frequent hand-washing is key and always remember the other important food safety saying: when in doubt, throw it out.
