Mountain Trek’s Hiker’s Chili

Servings : 6

28 ounces canned tomatoes
15 ounces tomato paste
1 celery stalk — sliced
1 onion – chopped
6 cloves garlic — minced
14 ounces kidney beans, canned
1/2 cup black beans — cooked
1/2 cup black-eyed peas — cooked
1/4 cup textured soy protein (TVP)
½ tsp each of black pepper — cumin, coriander, mustard seed, toast seeds until they pop

1 tsp turmeric
1 tbsp chili powder
½ tsp each basil and oregano
1/3 cup green pepper — chopped
1/3 cup corn, frozen
1/3 cup red pepper — chopped
1/3 cup orange pepper — chopped

Saute all veggies and add to crockpot. Add canned tomatoes and paste. Add spices and TVP. Cook on high and check for seasoning as it cooks.
