Ingredients
- 1/2 cup chopped fresh mango
- 2 green onions, trimmed and roughly chopped
- 2 tablespoons rice vinegar
- 4 1/2 teaspoons reduced-sodium tamari
- 1 teaspoon ground allspice
- 1/2 small jalapeño, seeded and chopped
- 1 (14-ounce) package extra-firm tofu, patted dry and cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch cubes
- 1 yellow bell pepper, cut into 1-inch cubes
- 1 1/2 cup (1-inch) pineapple cubes
Method
- Prepare a grill for medium-high-heat cooking.
- In a blender or food processor, blend mango, green onion, vinegar, tamari, allspice and jalapeño until smooth.
- Thread tofu, peppers and pineapple onto skewers. Brush with mango sauce and grill about 4 minutes per side or until warmed through and tender. Serve with any remaining sauce.
