Tofu Veggie Skewers with Pineapple Mango Jerk Sauce

Ingredients

  • 1/2 cup chopped fresh mango
  • 2 green onions, trimmed and roughly chopped
  • 2 tablespoons rice vinegar
  • 4 1/2 teaspoons reduced-sodium tamari
  • 1 teaspoon ground allspice
  • 1/2 small jalapeño, seeded and chopped
  • 1 (14-ounce) package extra-firm tofu, patted dry and cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch cubes
  • 1 yellow bell pepper, cut into 1-inch cubes
  • 1 1/2 cup (1-inch) pineapple cubes

Method

  1. Prepare a grill for medium-high-heat cooking.
  2. In a blender or food processor, blend mango, green onion, vinegar, tamari, allspice and jalapeño until smooth.
  3. Thread tofu, peppers and pineapple onto skewers. Brush with mango sauce and grill about 4 minutes per side or until warmed through and tender. Serve with any remaining sauce.
