Chewy Blueberry Banana Oat Bars

Ingredients

  • 1 ripe banana, mashed
  • ½ cup applesauce
  • 2 eggs
  • ½ cup non-dairy milk (or use dairy if you want)
  • ½ cup maple syrup
  • 1 tsp. vanilla extract
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • ½ tsp. salt
  • 3 cups rolled oats
  • ½ cup chopped walnuts (optional)
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 375 degrees and grease a 9 x 13 inch glass pan.
  2. Mash the banana in a large bowl. Add the remaining wet ingredients and stir together.
  3. In a separate bowl, stir together the dry ingredients.
  4. Add the dry ingredients to the wet ingredients and stir until combined.
  5. Fold in the blueberries and walnuts.
  6. Bake for 35 minutes and cool on a rack before cutting into bars.
