Ingredients
- 1 ripe banana, mashed
- ½ cup applesauce
- 2 eggs
- ½ cup non-dairy milk (or use dairy if you want)
- ½ cup maple syrup
- 1 tsp. vanilla extract
- 2 tsp. baking powder
- 1 tsp. cinnamon
- ½ tsp. salt
- 3 cups rolled oats
- ½ cup chopped walnuts (optional)
- 1 cup blueberries
Instructions
- Preheat the oven to 375 degrees and grease a 9 x 13 inch glass pan.
- Mash the banana in a large bowl. Add the remaining wet ingredients and stir together.
- In a separate bowl, stir together the dry ingredients.
- Add the dry ingredients to the wet ingredients and stir until combined.
- Fold in the blueberries and walnuts.
- Bake for 35 minutes and cool on a rack before cutting into bars.
