Chicken Hummus with Garlic and Pine Nuts

Chicken Hummus? That’s right. The combination of chicken, garbanzo beans, and all of the other ingredients you’re accustomed to enjoying in a regular hummus recipe meld beautifully together offering even more protein and taste.

Thinking outside the box often serves us well. The first time I read this recipe, I knew I couldn’t wait to make it. It’s different, unexpected, and most important, incredibly tasty! Challenge friends to have an unusual food combinations potluck and bring this dish that promises to be quickly consumed and enjoyed by your guests.

Serves: 16

Ingredients

  • 8 oz. chicken breast, cooked
  • 2 Cups garbanzo beans, cooked
  • 4 garlic segments
  • 2 Tbsp. olive oil
  • ¼ Cup water
  • ¼ Cup fresh cilantro, minced
  • ¼ Cup fresh lemon juice
  • ¼ Cup pine nuts, lightly roasted
  • Pinch salt

Directions

  1. Place garbanzo beans, salt, garlic, olive oil and lemon juice in food processor.
  2. Puree till smooth (add a little water, if necessary, until it reaches the consistency of peanut butter).
  3. Add pine nuts, cilantro and diced chicken. Mix and chill till ready to serve.
  4. Use alternatives to chips such as sliced red, orange, and yellow peppers for added nutrition and color.

Tip: Serve very cold for optimum flavor.
