Your First Swap: If you’ve joined a CSA or have a garden, you’re certainly trying to find creative ways to use the greens. Instead of the regular salad or even saut©, try taking a cabbage, collard green, mustard green, or large spinach leaf and use it as your wrap instead of bread. You’ll still get a hefty dose of fiber, plus dark leafy greens have anti-carcinogenic properties!

Here are four more easy swaps:

1. Try cauliflower instead of rice. This might be my favorite swap. Inspired by the Conscious Cleanse (consciouscleanse.com), you can run cauliflower through a food processor until it has the texture of rice; then saut© it in some garlic/olive oil (or add some Thai seasoning), and you’ve got a great side dish for stiry-fry.

2. Try spaghetti squash instead of pasta. I like to use spaghetti squash in place of rice pasta for such dishes as pad Thai. You can also use it for Italian dishes. To use, cook the spaghetti squash as usual, scrape out the noodle-like flesh and then top with your favorite “noodle” toppings. Winter squash is rich in vitamin A and beta carotene.

3. Portabellos instead of dough. This one is a bit more of a stretch, but instead of making pizza try making stuffed mushrooms (just go easy on the cheese). Portobello mushrooms are thought to help boost immunity and may be anti-carcinogenic to boot.

4. Try chard instead of fruit. In your smoothie, add a handful of chard instead of a second serving of fruit. Swiss Chard has very little taste in the smoothie but offers a hefty dose of fiber and vitamins.
