Recipe: Raspberry Chia Jam

Makes ~1 cup
Ingredients
- 3 cups fresh or frozen raspberries (I use frozen often, too, and it’s fabulous!)
- 3 tablespoons orange juice
- 2 tablespoons chia seeds
- 1⁄2 teaspoon vanilla extract
Instructions
Stir the raspberries, chia seeds, and orange juice together in a medium saucepan. Bring to a light boil, then reduce the heat to simmer and cook, uncovered, until the raspberries break down and the mixture thickens, 10 to 12 minutes.
Remove from the heat and stir in the vanilla. Let cool 20 minutes. Spoon into jars and refrigerate.
The jam will thicken more as it cools. If you prefer a smoother jam, use an immersion/hand blender to puree to the desired consistency.
